 buried copper line to be moved

Hi - first time poster/long time reader. I have a job to "move" a section of 1" copper pipe (main feed) that comes straight up out of the ground (used to be inside a wall that is now removed) and goes up into a drop ceiling and then across to supply water to a building next door. My question is: once the water co. shuts the main water feed off, what is the best method/practice to cut into the existing copper pipe below grade and then trench it into an existing wall about 8' away (up into the ceiling again) Can I use a section of PEX to go from copper feed (coming out of ground) to copper in ceiling (basically cutting out section of copper pipe and re-routing thru new trench and up into a wall then to ceiling. Or should the new section be done in copper again? (and can I use copper push fittings to join the copper?) thanks in advance for any help/info on this matter.

above ground there are many ways to accomplish what you want. including sharkbite..

at Packy. says that the fitting contains lead and is not for potable water.

if possible you can solder on a male adapter to the copper. Then a brass coupling and then into that a PEX male adapter to get you to PEX to get you up and out of the ditch. Only problem may be soldering that out of round copper in a ditch.

It may also only be for cold water. Technically, any copper joint under concrete is supposed to be brazed, NOT soldered.
