I'm in CA. I've just moved into a Townhouse. I'm replacing the garbage disposal, which is leaking from the bottom. I've already installed a new single-hole SS sink. The old sink had two holes, one for an AAV, but I wasn't aware of this AAV issue when I replaced the sink. In short, how can I install a new garbage disposal, which does attach to the dishwasher (an old dishwasher without high loop drain line), and also resolve the AAV issue? Would a new dishwasher with a high-loop drain line eliminate the need for an AAV--in CA?

It wasn't an "AAV", but an air gap. The air gap is required in California for connection of the dishwasher.

drill the appropriate hole in the sink
or
drill the hole in the countertop - common installation
or
replace the sink
