Trying to be helpful to my mom and I am adding a water line for her new fridge. I am sure i am missing something basic. I went to lowes and bought what i thought was water line and the brass fittings. I bought 1/4" tubing and the brass fittings. They don't fit on the fridge. The 1/4" is too small and the 3/8" is too big. What am I missing? Something I read online says "1/4"" pex but i don't know what that is? I am using the clear tubing.
This is the tubing. i got it in 1/4" and 3/8" but neither fit the fridge and I can't find what I need.

All the fridges I have hooked up water lines to use 1/4 inch OD tubing. Your pic shows 3/8 OD tubing which is too large.
I suspect you bought the wrong fittings for the 1/4 in tubing and concluded erroneously that 1/4 was too small.

GE fridges use a 5/16 water line and you need a 5/16" - 1/4" adapter fitting to connect the appliance to the 1/4" house waterline. John Guest makes a push-to-connect, local big box should have one in stock. [www.homedepot.com]
Use the 1/4 tubing and fittings you bought to connect to water supply.
