Occasionally I have a need to cap off a standard 1/4" or 3/8" stop valve. On the output side. For kitchen sink or ice maker.
Can i just use any brass cap. And then would I put a washer inside the cap instead of using tape on the threads?

what you need is called a compression cap

It seals by compression so it shouldn't need any tape or dope, the cap should either have a built in washer inside or a copper ferrule that goes between the outlet and the cap.

Just having a hard time finding the 1/4" one.
Ones I see dont come with washers. And could not find a place online that sold washers that small.
It seems most dont come with washers and you buy your own. I had some that fit the 3/8" cap which was a 00 washer.

I have also had no luck finding the 1/4” compression cap
Roll up some Teflon tape into a ball with your hands and stuff it in the cap it makes a good water proof seal if your valve is slowly passing
