When I close up my summer home for the winter I shut all the water off and open all the valves to drain. What is the correct procedure when I open the house back up in the spring to avoid air entrapment? Start shutting off faucets from the top and work down" or the opposite?

Open it up any way you like, it will not make any difference at all. "air entrapment" does not cause any issues, it is a myth, perpetrated by people not familiar with plumbing.

shut all faucets including the valves under the toilet. shut the feed to the hot water.
now, when you turn the water on you should hear water running but only for a moment. if it runs longer than a moment you have a leak somewhere.
now open the feed to the hot water. you will hear water running as the tank is filling. give it a couple of minutes and shut the feed back off. walk around the house listening for air hissing out. that is a leak.
so if you hear no hissing then it is safe to re-open the feed to the hot water. now you can confidently open any faucet in any order you want. the air will be forced out by water pressure.
