do you want to look at scratches or chips.
stainless will scratch
cast iron will chip
for myself i would use a big bowl/small bowl stainless with the big bowl deeper and the small bowl has a disposer.

I recommend 16 gauge or lower if you can find it - buy it ONCE and be done forever.

I also prefer stainless steel for kitchen sinks.
Note that the lower the number the thicker the walls are. Therefor 18 gauge is thicker than 20, 22 and so on. Depending on your budget I recommend a minimum of 18 gauge.
There are different grades of stainless steel and here to depending on your budget pay attention to the grade of the stainless steel as not all stsinless is alike and with the sam e identical composition.
Insulation on the bottom side of the sink makes it more quiet so if you can afford it look for that as well.
The finish is something to consider, I don't recommend a polished finish as I guarantee it will end up looking terrible.
I also don't recommend buying a sink with non rounded corners. Today's "farmhouse" sinks seems to be popular, deep one compartment with non rounded corners are harder to clean.
I personally prefer 2 identical sized compartments however that's a matter of how you use the sink and your personal preference.
