Can I screw an IPS 1/2 male into G 1/2 female? If they are compatible will it create an adequate seal without leaking.

A G thread is a Whitworth straight thread. It is not compatible with NPT threads.

I just ordered a new potfiller so I might as well change the inlet while I wait. Much obliged!

..... What you got there is also know as British Standard Pipe thread. BSP is differs {sic. different} from NPT (National Pipe Thread) in that the pitch of the groves is different. While it is possible to mix and match NPT and BSP in most applications if the right amount of dope is used, I would tend not to recommend it. Based on your post I'd say your looking at CA or European components.
In addition:
IPS / NPT is a tapered thread
G / BSP is a straight 'running' mechanical thread designed for a gasket/end washer seal
