 Lower Water Pressure

My water went out and I had my pressure switch (40-60), the 5 gallon pressure tank at the top of the inside of the well, and the 1/2 hp 10gal per second pump replaced. All of them have identical configuration as each item replaced however my water doesn’t run out with as much force. Plus, when the kitchen water came on it affected my shower. Not the pressure but the temperature fluctuated. I don’t like being scared in the shower. Please help.
Perhaps worth adding, I replaced the wire from the panel box to the well in a three foot ditch however I can’t run it through the wall of the well because roots have taken about four foot around the well casing. I used 10-2 wire. I ran the wire over the curb and then into the well and put the concrete top on. The guys ran into a problem with rusty connectors and replaced a couple.
Any suggestions to increase my pressure and stop the fluctuating temp? Please help!!

The company who installed the tank should come out and adjust it as for the shower temp is it a single handle valve orn3 handle

I have a slight hole in the secondary hose attachment that sprays water also. But that should not be turning my shower water steaming hot or ice cold when someone turns on the kitchen water faucet, right?
