How difficult is it to change from a single handle water knob to a double handle water knob for my shower?

without seeing the job, it is difficult to say.
if you have plenty of access from the back side of the shower then the piping part should be pretty straightforward.

A two handle shower valve with a seperate hot and cold handle won't be pressure balanced, thus would'nt be code.

Packy, that's good to know. I knew they made a cover plate to go from a 3 handle to a single handle, but didn't know about a plate from a single to a 2 hole.
