 Gravity flow Cabin Faucet

I have a cabin in the woods. Spring water is collected and sent down a 1" Poly tube. It goes down a hill, across a holler, then back up a smaller hill to the cabin.
The 1" pipe goes to 1/2" PVC in the cabin to the sink, then drains back into a drain field garden.

I would like to find a faucet for our sink that has no water restriction and larger ID shut off valves.

If this does not exist, is there a PVC connector that can swivel left and right like a kitchen faucet?

for shut of valves, you can use gate valves or ball valves. both have no restriction..
but for the faucet ??
the US has mandated all faucets must have restricted flow.
they used to have the faucet come with a device in the aerator that was easily removed .
if you can find one of those types then you are good to go.
just how you would go about figuring this out ???
i'm guessing that a faucet that operates with a plain old stem that has a washer and bibb screw will give less resistance than a cartridge type.

I bought a faucet with a removable aerator, but the valves have such small openings.
I have decent pressure from the height difference and the 1" down to 1/2" pipe. I fear the faucet valve holes will be a big issue.
I will try it out tomorrow, When I return to the land of internet access, I'll update on it it works.
