I have a plumbing setup that includes 2 50 gallon hot water heaters with a recirculating pump. I'm looking into moving to a hybrid system, but I'm unsure if I need two hot water heaters, or if I could move down to one. Any thoughts or suggestions.

you won't get any more nor will you get any less hot water from a hybrid heater.
they just give you a second way of heating water.
they are good for dehumidifying your basement in the cold months.

they are way more expensive to buy and install.
the condenser part of it makes condensate water that has to be gotten rid of.
typically you need a condensate pump to pump the water into your sewer line.
AND when it needs to be replaced you just cant take the old tank to the scrap heap. there is some kind of refrigerant in it that needs a licensed AC guy to pump it out into a special reclaiming tank.. big bucks for that..
yeah, you will save on electricity but there are other costs to factor in...
some areas have big rebates if you buy one..

If you have a good south facing roof surface somewhere close to your existing water heater you could consider solar energy to heat or preheat your water. You could drastically reduce your electric usage on a good solar day. Somewhere someone has done the energy and cost calculations to see if this is a practical thing to do or just a good environmental thing to do to cut your own carbon footprint.

Hybrid heaters are air conditioners working in reverse. They are using heat from the building and replacing it with cool/cold air. During the Winter,if that heat was generated by a boiler or furnace, then it was NOT "free energy" and the heat source has to work harder to overcome the new coldness in the room.
