I am working on a restaurant remodel and the dishwasher waste is indirect. I can't find in the UPC where the code is for this. I thought they were normally direct connect. Am I worng?

i have always done them indirect. usually everything in a kitchen is indirect with the exception of disposers and those do not go to the grease line they go to the sewer

also remember pvc is not rated for hot water so can not be used for the drain piping. either galvy, copper, or cpvc are supposed to be used

Commercial Dishwashers, are big generators of grease from the wash cycle. In direct thru a separator is most important.

As far as the dishwasher discharge, floor sinks are commonly used, which in turn are indirect connection. Depending on the available floors sinks being a rehab, you could discharge the dishwasher into a main drain as long as it is trapped and after you verify that line is a grease trap line and not a sewer connection.

What wrong about discharging and dishwasher directly? I would also assume it should be tied into the grease line not sewer, because its a commercial kitchen, and you can't control what is put in them. Same goes for hand sinks and such in the kitchen areas. Am I missing something?

it is a health issue. commercial kitchens are not residential kitchens. their health standard is way above residential since they deal with a large amount of the public. connecting it directly opens it to being contaminated if something should go wrong in the line.
and then where people are getting tieing them into anything other than a grease line i think was brought up by me just mentioning that everything in the kitchen is normally indirect with the exception of the disposal which around here is to be tied into the sewer since the food causes problems with the grease interceptors

I thought disposers are supposed to run through a seperator then into the interceptor, as far as the UPC states. The health issues makes sense.

ah that is just some areas adding to the code.
ipc section 413.3 commercial food waste grinder waste outlets.
commercial food waste grinders shall be connected to a drain a minimum of 2 inches in diameter. commercial food waste grinders shall be connected and trapped separately from any other fixtures or sink compartments.
localities can add to that and is what you are talking about.
i dont have the upc with me right now or i would look that one up to see what it says
