 Best way to join old galvanized pipe to new copper?

I bought a dielectric union from big box. It seems like it's made for a water heater.

Is that the correct part to use behind a wall for a bathroom supply? Or can I use a brass ball valve? I'm installing a shutoff anyway. The shut off will eventually be covered (maybe behind an access panel).

Unions should be accessible, not in the wall. Can't you get rid of the old galvanized?

Use a 6" brass or stainless steel nipple to keep them apart.

It's my buddy's place. I would love to get rid of all the galvanized but it drops down to a basement storage we can't currently get in as the owner is out of town. We are going to replace as much as we can now while the bathroom walls are open.

The hot is already copper. I can see where the previous owner took out bedroom wall to replace the hot water. They left the cold galvanized.
