Just plug the hose and install the dispenser in the hole.

Sometimes, easier said than done, if the sprayer has a "proprietary" connection and there is NO CAP available.

i have nothing against pulling the hose down thru the hole in the sink, cutting the hose and inserting a brass plug and securing it with a hose clamp.
just about 100% of failures are with the spray head. that would be eliminated.
