Hello,
My sink doesn't drain, but when I separate the siphon from the pipe and pour water directly into the pipe, there is no problem. Same with the siphon itself. I don't see a blockage anywhere, but when I put it all together, there it is!
Maybe it is something to do with physics?

You probably have created a "double trap" somehow, possibly by a stoppage further down the line. What is a "siphon", since there should be none in a drain line. In fact the reason for vents is to PREVENT siphons.

Do you have a sink drain strainer with holes? If yes, there could be an air bubble that forms under the strainer and restricts the water flow. Enlarging some of the holes could allow the air bubble to vent out. Your drain piping wouldn't pass an inspection here in the USA.

Ive had this problem before thankfully i fixed it within a few days of it happening, the minor yet helpful information given here was practically what i did to fix my problem, hope it goes aswell for you as it did for me.
