I removed my old bathtub, The opposite drain end wall is built out 1 1/4" with purple sheetrock and cement board over that. The wall opening dimension stud to stud is 61 1/4" and the new tub is 59.75". Is the above build out acceptable/correct or should it be removed and built out differently? If so how?

Your opening for the install after drywall or other coverings should be no more than 1/2", if the walls are perpendicular at exactly 90 degrees. If not correct the wall to conform to the above and install any furring necessary to make a correct install for tile or your choice of finish covering.

Understood. One more question, with the screws at approx. 6" on center in the cement board appear to be deck type coarse thread screws 3" long, the sheetrock build out is 1 1/4" plus 1/2" cement board(total 1 3/4" Is this screw length sufficient?

Gotta wonder why they chose to build it out like that, instead of just adding 2-by's on the flat. You need to have a stringer into framing. I would not leave it that way. But that's just my opinion.
