I am seeking some advice on the best effective way to remove the existing drain and replace with a new square drain cover.

The drain body is embedded in the mortar base. It really needs to stay and just replace the round grid strainer with one of the proper dimensions .

Being that the square trim has a round strainer, you should be able to remove the round strainer and pry out the square trim. True square drains usually are threaded into the drain body and you can't just pry them out.
