Hello.
I work at a private school that is on it own well and septic system. The well pump is set to kick on when pressure drops to 40 psi, it shuts off when it reaches 60 psi. We have a commercial dishwasher located about 60 feet from the pressure tank. After about a year of use the users of the machine report that it has always left food on the dishes and that prewashing is always needed. Reading the manual the manufacturer reports that the recommended MINIMUM pressure for an effective rinse cycle is 20 - 22 psi. The gauge on the machine reads only 14 - 16 psi. There appears to be plenty of pressure at the 2 sinks right nearby. I am considering getting an inline pressure boost but I really don't understand how it could be needed. Our water is softened and the machine about a year old. Where would you start investigating?

Does the gauge on the machine read the pressure all the time, whether the machine is running or not?

No. It shows pressure when the machine is filling. It shows no pressure during the wash cycle. Then shows pressure again during the rinse cycle. Pretty sure this is to be expected.

Is there a filter/screen at the machine's inlet? If yes, it might be partially clogged, causing a pressure drop.

Unless the piping to the machine is grossly undersized, you are probably dealing with a machine problem. It would not hurt to install an inline gauge prior to the machine for your own observation.
Leftover food can also be attributed to water temperature being too low.
