I have a jack and Jill bathroom and both of the cold knows turn the wrong way. I can get the knob off but can't figure anything else out. Help please,

Knob handles or levers? Does the cold turn the same direction as the hot?

It may be because the manufacturer installs the cartridges assuming EVERYONE will use lever handles so the cold operates backwards from what you would expect. You either need a new stem/cartridge or maybe the direction is field reversible, but we would have to see a picture to tell for sure.

Knobs and no it turns cw on and ccw for off

That is how MANY manufacturers send their faucets out, rather than convert them to ccw/on rotation for use with round/knob handles. It is just easier for them and they assume the user will get used to it.

Knobs have cartridge that turn the same way (hot & cold) Lever handles use opposite cartridges.

And that is the way it is suppose to be. If you wish otherwise, call the manufacturer and ask for opposite cartridges.

For lever handles but not intuitive for round, although that is the way MANY "non-traditional" faucet companies send them out.
