I have an old house (100 next year). The shut off valve to the dishwasher has failed. I've temporarily put a cap on the 5/8" flare (male) t that fed it. What's the simplest way to go from that 5/8" t to the dishwasher adding a new shutoff valve?

The easiest way would be to cut the 5/8 tube and insert a compression ball valve(or Sharkbite style).

If you want to keep the tee and can't create a new flare, Parker makes a flare adapter #US5-10. You can screw the adapter to the tee and then attach the valve to the stub.
