I will be having a full house pex repipe of my home due to pin hole leaks in the copper pipes...If I have the Master plumber install me a manifold with individual valves leading to areas like the kitchen, water heater, bathrooms, etc. be a good idea in the event I have issues later...This should help us to have water in some places instead of shutting the water off in the whole house...What are your thoughts ??

that is the way i would do it..
get good quality copper manifolds with mini-ball valves.

locate the cold manifold near the water meter and locate the hot near the water heater.

Code requires individual valves for each fixture.
