Is it possible to replace a bathtub shower valve with access to it from the back. Not removing any tile up front??

You just need to see if the rough in and holes in the tile match..

If the holes do line up I was just wondering how hard it would be to redo the plumbing. It's copper

Moen, Kohler, Delta....Any I should stay clear of...

here is the 2 dollar answer to the million dollar question. those are all good valves. check the rough in/ finish dimension to see which one will match up best with how deep it sets into the wall.
if one lines up nicely, you just need a couple of 90's and a few slip couplings.
