 Hot water heater - couple issues

Last evening, I started hearing banging type sounds. Tracked it down to the pipes in the wall coming from the hot water heater. Almost sounded like the noise radiators make. I then felt the intake pipe to the heater and it was hot. I shut the valve off and the noise stopped. However, when I opened it up again, the noise started again. I then opened the hot water in several faucets and let it run for a few minutes. I also drained some of the water from the bottom drain. The noise stopped and the intake pipe was cool to the touch. This afternoon, I checked the heater again. There are no sounds, but the intake pipe was hot again.
Does anyone have a suggestion what the issue might be? The little I know, I don't think the intake pipe is supposed to get hot.
Previous owner had it set at about 140. I turned it down to 120.

Is this gas or electric? I suspect the noise you heard was sediment in the bottom of the tank and you need to flush it thoroughly to get it all out. The cold water inlet will always warm up simply due to conduction of heat from the hot water tank to the piping, and that is true of every tank unless you have a leak somewhere that keeps cold water constantly moving into the tank.

You were right to set the temp to 120 and you should flush your heater at the hose bib at the bottom of the water heater. These hose bibs normally will clog up with the pieces of minerals that flake off into the water heater so you may need to remove the bonnet on the hose bib, which will also remove the handle and stem, so you can get a clothes hanger through the valve to stir up the mineral flakes and break them up to allow them to pass through the hose bib. in a worst case senario, you could remove the hose bib, but be careful if it is a Plastic hose bib like so many are using these days to save a dollar, they can break off and you will need an easy out to remove the plastic hose bib threaded piece that remains in the opening. But if you can get it out, replace it with a ball valve with a ips to hose adaptor so you can drain with a larger opening. It will be quicker and allow bigger pieces of minerals to flow out. BEFORE YOU REMOVE THE HOSE BIB OR BONNER MAKE SURE THE WATER IS OFF. Good luck
