I am removing a wood burning fireplace that was plumbed with gas line. It has typical ball valve with key to turn on/off. I will not be replacing the fireplace at this time, but want to retain the option to install a gas fireplace in the future. The fireplace would sit on the other side of this same wall that I removed fireplace from. So I want to leave gas line coming to this area. However, the location of the on/off valve in the pipe will be closed up in new construction. So should I simply install an end cap at the end of the gas line run and open the ball valve before closing up the wall? Or is it best practice to just remove this valve altogether?

Do NOT leave a valve in an inaccessible/invisible spot.
NO VALVES INSIDE A CLOSED WALL W/O AN ACCESS PANEL
IMO:
remove the valve and leave a capped 'stub out' for your future installation, or use the valve instead of a cap, but ACCESSABLE
ALL/ANY valve can leak from the packing assembly - you do NOT want your wall cavities to fill up with flammable gas.
(you have no choice with fittings)
