We recently relocated a laundry tub and I realized the copper supply lines and the PVC drain are about 5 feet behind the crawl space vent. What kind of methods do plumbers use to protect pipes? I noticed one spot where the original builder crisscrossed the hot and cold pipes under the house. Is this a trick to give some warmth to the cold water pipe, or maybe just the way it worked out? Should I put some sort of deflector behind the vent?

Close the vents in late Fall. Many frozen pipe calls that I receive in February are due to foundation vents left open.

Insulating the crawlspace pipes will further protect them from freezing.

Criss crossing the pipes just happened BY Happenstance as they say
water pipes in crawl area in you say Tennessee? I would insulate the pipes and is there only one foundation vent creating a air freezing issue?
Close off with some insulation and have dinner
Scrubbing one vent is not the end of the world
As a contractor and home inspector and plumberI would never look back
