What supports are available for floor joists when rerouting large drain pipes, like shower and toilet drains?
(I have a picture but haven't figured out how to add it! I think it would help a lot.)

lets say you have 2 x 8's for floor joists. you cut strips of 3x4 plywood that measure 7 1/4 inches by as long you can fit in the available space. 8 feet is great. you center the plywood where you want to drill then glue and screw the plywood on either side of the joist.
this is a rule of thumb used by contractors. of course there are limitations as to how much you can remove even though the joists are beefed up.
