Why does the hot water last for only about a minute in my bathtub/shower combo but works fine in my other shower and faucets?

If you have a pressure-balanced faucet or a thermostatic faucet, it may be a problem with either of those systems.

when you run out of hot water, leave the shower running cold and turn on a sink to hot. what happens?

How big is your water heater? How old is your water heater??
What brand is your mixing faucet? How old is it?

You may have a circulation system with a bad check valve.

I just ran the hot water in my tub, it lasted about 1 minute and then turned cool. I turned by bathroom faucet on hot and the water ran and stayed hot.

We don't have a water heater, we have a boiler run off oil. We bought our house 1 year ago and there was no problem with the bathtub. It started about 3 months later. We had our boiler serviced and they couldn't find any problems that would cause this issue.

It is a single hand fixture that goes from cold to hot. I am not sure what you mean. Should I have the whole fixture replaced?

Can you take a picture of your shower/tub valve? I'm guessing the issue is with your shower valve. Knowing its brand allows us to help you.

you have a tankless coil that can not keep up. it is rated in gallons per minute. when you exceed that rating you will get cold water not hot.
please do as i asked. run the tub until it starts to get only cold and then leave it running cold and open the hot faucet on the sink. what happens???

The hot water stay hot in my other shower for as long as I'm in there which could be a while. It only lasts for a minute in my other tub/shower combo. When the water turned cold, I turned on the bathroom faucet and the water ran hot,

It sounds to me like your new shower head is a low flow head and isn't letting your tankless operate properly. If you turned the temperature down on the heater slightly, it would probably be fine, or else get a normal shower head.
