So my wife is opening a salon but she realized she knows nothing about plumbing and neither do I. I've done most of the construction myself but now she has a shampoo sink and no hot water in the building. Now she wants to get an electric water heater but can't decide how many gallons for one shampoo sink or if she should go tankless and how many GPM would be ideal. She says she will only have to wash up to 2 peoples hair an hour and the shampooing is only 10 minutes a person.

If the hair sinks use a 2.5 gallon per minute head on the spray, then you will use at most 50 gallons of hot water per hour. I assume that is a single sink and not 2 people washing hair at the same time. If you have the space, I would suggest using a 50 gallon electric if it is only the single hair sink. If at some point your water needs aren't being met, you can switch to a commercial tank, or simply add a second tank to your system. If you get so busy that the one tank can't keep up, you will be making plenty of cash to make any needed upgrades. Keep in mind that you can set the thermostat higher if you find you are running a bit short of hot water and that will help.

Be sure there is a thermostatic mixing valve plumbed into the hot water outlet on the water heater.

as i have advised people in the past...
figure out your demand and contact a water heater manufacturer such as bradford white. get their engineering department and give them the specs. they will tell you what you need.
that is what they do..

Hot water for a single sink is not rocket science. All they need is a single 50 gallon standard water heater.

It takes 10 minutes to wash the hair, but the water is only running about 2 or 3 of those 10. Tankless would be an unnecessary luxury.

And, if it were eventually insufficient, I could either convert it to 3 phase or simultaneous operation, depending on the power source, to double the capacity.

Is this Hair Salon being added to a home.... or commercial structure? Depending on the location would suggest different answers. Will there be an inspection after the work is completed? What will be used to capture hair?
