I'm a total plumbing novice and I need to install shut off valves on my clawfoot tub. I know the chrome lines are 1/2", but what size are these male threaded copper fittings I need to attach the valves to?

I think they measure 3/4" at the threaded part, but I don't know where or how you measure these.
I was thinking about ordering these but I can't tell if the 5/8 size is correct?

i can't open your picture but if you want to attach valves to threaded adapters, those are the wrong valves.
if the threads look to measure about 3/4" then they are 1/2" IPS. you need a valve that is 1/2" female threads on the inlet side. it is a very common valve. the outlet size depends on what you are arttaching to the valve.

The 5/8" valve in your first post, has a compression inlet and would be if you just had ½" nominal copper(5/8" actual outside diameter) stubbed up through the floor, without a fitting on it. You have a ½" IPS adapter soldered onto the pipe, so the valve in your second post is correct, if the chrome tube has a ½" outside diameter.

pipe up through floor = 1/2" (M)NPT - 1/2" threaded pipe
an 'old time' 1/2" thread x 1/2" compression adapter nut was used along with a 'cone washer'
NOTHING is 'soldered'
a 1/2" female threaded x 1/2" OD compression stop is what you need
but
your escutcheon will not fit under that valve - you will need a flat escutcheon for 1/2 pipe - make sure it will fit BEFORE you proceed - pack the depression in the tile with PLUMBER'S PUTTY before 'setting' the escutcheon
if you can't get an escutcheon under the stop use a 1/2 compression x 1/2 compression stop on the tube above your existing escutcheon

that is the correct valve.
i can tell you this..
1/2 IPS measure 7/8 inch which would look really close to 3/4 as you described.
3/8 IPS would be .675 inch. this too would be close to 3/4 inch but a tiny bit smaller.

You cannot "solder" a valve to a galvanized pipe. It is screwed on.

NO ONE has ever installed a 3/8" galvanized supply line to a leg tub. 1/2" is/was the standard. Their only consideration is the size of the supply lines to the new faucet.

Her picture shows, what appears to me, to be a copper male adapter AND she stated they were threaded copper adapters, not galvanized pipes.

i can't open the provided picture. the person said there was an adapter soldered onto a pipe. one never knows if the installer used 1/2 copper by 3/8 male adapters.
that is why i cautioned the person to measure very carefully.
P/S, remember the ball ells that were used with bathtub faucets were 3/8 IPS on the inlet.

that's 1/2 inch...
gonna have to remove the valve stem to turn the valve. make sure to use a second wrench to hold back on the adapter when tightening the valve.
