Can I sweat a corner so close to the valve?
If so, should I do it in one step or two?

It will work ,just make sure you have all the parts removed from the faucet. I would install the faucet where you want it and then solder the joints.It makes no difference,everyone has their own way to do it and you will get a dozen different answers on how to install it . Just make sure the solder doesn't run into the faucet body .JMO

You could solder it there but it looks like it will put the spout to close to the cover plate for the faucet.

Thats the cold supply ,not the spout connection .Besides it's a shower valve .

If he's reluctant to fire up that torch he can always use those threads. I'm sure there's plenty of room for >1 fitting

OP shows standard copper 90º and short pipe into valve, not a st 90º.

To answer your question; it appears you have pulled the cartridge for that Moen shower valve, the clip is out. Go ahead and solder it as you see fit. Clean Shiney, Flux, and Go for it in one pass. Measure twice, cut once. Best wishes.

i solder into Moen valves all the time w/o taking the cartridge out...ive had 1 melted out of 1,000 and that 1 was many years ago....just heat it up as needed and dont go over board
