We have a clawfoot tub. We bought a drain system, the overflow pipe goes straight down into the floor - there is a t right above the floor that connects to the actual drain.
The person who built the house did not put a p trap in the line for the tub.
Here is the kicker, the floor is solid concrete, and I do not want to start digging that up.
I know I can put a shallow p trap in for the drain and that will take care of that issue, but how do I stop the gas from coming straight up the overflow pipe?

Is this tub replacing an existing tub which had no trap? Or are you putting it in a new position? If there's not a trap where you need it, there's only one way to do it right - without 'rigging' it - and that's to bust up the floor.

What makes you so sure there is no trap? You do realize that the traps for tubs are below the floor?

If you put in a "shallow trap" without breaking concrete, you will create an "S" trap and that will also let sewer gases into the room. If you connect the overflow properly sewer gas will NTO be a problem.
