We built our home 6 years ago. While modest in size, we did choose high-quality fixtures such as Moen plumbing fixtures, Bosch dishwasher, Maytag washer/dryer.....including our Moen stationary showerhead. My wife now wants a hand-held showerhead (I prefer the stationary), either as an addition to the stationary showerhead, or as a replacement. I went to the big box stores and everything they have in showerheads is made of plastic!! Then I went to the plumbing supply where we purchased our Moen fixtures 6 years ago.....they're plastic. And the little plastic hoses on the handheld showerheads feel like they'd split if you dropped them.
Any advice? Can I add on just a handheld to the existing stationary showerhead, or do I need to replace everything. Where can I find high quality, all metal showerheads?

most handhelds are plastic...some feel cheaper than others though
everything at Home Depot is cheap junk...go to a plumbing supply house
they make a diverter that goes onto your current shower arm..it will allow a normal shower head AND a handheld...you just turn the diverter lever
Kohler makes a REALLY nice one, but its like $225-250 range.....its a arm and diverter in 1 big brass piece....if you want quality get the K-9511
the Kohler flipside handheld is decent feeling..its all plastic, but its one to consider
K-17494 or K-17492...they are dirt cheap

They are "throwaway" items, which is why they are made of plastic. When they stop working, including the replaceable hose, you just buy another cheap one.
