I would like to remove the garbage disposal on the right side of my kitchen double sink. We are vegetarians and diligently scrape all our dishes and pots into a bucket which we put into our garden composter and empty the plastic sink tub into another bucket to flush our toilets so very little dish water goes down the drain. The garbage disposal is old and has started leaking and we definitly do not need to replace it with a newer model. As a jack of all trades, master of none I've done all of the plumbing jobs need in our home over the past 18 years such as snaking lines, replacing faucets in all 4 bathrooms and kitchen,etc so I have some experience but I really would appreciate any advice as to how best to go about this.

That is relatively straight forward. You will remove the mounting flange that the disposer is attached to, and replace it with a sink basket. Much of the piping under the sink may need to be replaced or "rearranged".. If you go into any hardware store, they will give you a basket full of parts. Fix it up and return the unneeeded pieces.

More specifically unplug disposal remove hose there is a flange that holds the disposar in place under the sink. Most disposers can be turned about 90 degrees or less and will become loose as the flange has a "cam" type arrangement where the ears are. Now that the disposal is likely removed look for a snap ring and 3 small bolts with sloted heads. Now loosen the bolts and the bottom flange will become loose but not removeable unless you tale a screwdriver and pry off the large metal snap ring.
Now you should have everything removed for a new drain system This describes how mosr disposals are installed like an Insinkerator etc Hope this helps
