If a valve or fitting has a 5/8" OD SWT, does it mean it will take a 1/2" nominal copper pipe into it?

Yes.
Copper water pipe is usually type K, L, or M. That type of copper may be ridgid, in 10 or 20 foot sticks, or soft, in rolls, often 60' This product is referred to by "nominal" size, eg 1/2, 3/4, 1" etc. This nominal size refers to the approximate inside diameter, and the OD is always EXACTLY 1/8 larger than the nominal. So 1/2 copper is exactly 5/8" OD.
ACR tubing is referred to by OD. So a 5/8 ACR coupling is the same as a 1/2" L coupling

I have one more unrelated question.
If I need to feed from the kitchen, a 1/2" hot to the faucet's hot side, a 1/2" to the faucet's cold side, another 1/2" cold which may run through a filter to a drinking water dispenser, a 1/2" hot to go to the dish washer.
Should I do four individual stubouts? This is what I have. I saw at the store today they make dual outlet angle valves, which means I only needed two stubouts?

Sum, If you have 2 stubs then use the dual outlet valves, IF you have the opportunity to install individual ones do so especially under slab

as long as they have separate handles to shut off each fixture individually use the double shut off other wise install a tee and use 4 stops no need for 4 stub outs but that would work also

as dlh says, either way is fine as long as each outlet can be seperately isolated with it's own shut off. (no combo shut offs)

That is the way it is usually done. With a 1/2x3/8x3/8 valve for the hot and a 1/2x3/8x1/4 valve for the cold.

What does being under a slab have to do with it. Almost ALL of our piping is "under a slab", and we still use dual outlet valves.

WE use a "million" single handle dual outlet valves, to every ONE two handle one.

every fixture must have a seperate shutoff.

Not just myself. It includes all of them installed by the other plumbers in this area also. You have to search to FIND a two handle shutoff valve.

HD has always stocked one, but I think it is an odd ball, one or both of the outlets is 1/2 compression. Not much call for that one, as I don't think they stock 1/2C supply lines!!

They also come with two 3/8" outlets. A rare one would have a 3/8 for the faucet and 1/4 for the dispenser.

I have never used a dual outlet shutoff, I always assumed that was handymanish. I have always sweated in a tee and used a separated shutoff.
