Can sadle valves be used on PEX lines? I would like to use a fridge water installation kit which includes 25' of 1/4line and a saddle valve assembly.

I wouldn't use one. You could use a shark-bite or get the proper pex tee.

around here any saddle valve on any pipe is frowned upon....they tent to only work once,then headachs...get the proper sharkbite and reducer ....goodluck

i recently did an install and my local supply house carried a tee that was 5/8 x 5/8 x 1/4. it had those ends that are like sharkbites. the 1/4' branch had a ball valve molded into the plastic tee.
i should get the info and post it, one of these days.

is easier than on any other type of pipe. Suggest you (or a plumber) do it "right" for your own benefit.

Absolutely not. The PEX would collapse from the pressure instead of the saddle sealing. A saddle valve is a VERY poor idea, even with copper.

The "saddle valve" was a great idea in the 1900's. Today, its a no-no. Not on copper. Not on galvanize. Not on cpvc. Not on Pex. By using a saddle valve your risk everything. Its worth the price of doing it right the first time.

Anything else and you won't sleep right at night!

Saddle valves of any type, used on any material are not allowed by the code.
